When your sugar mixture is boiling and clear, no stirring, just swirling. Use a pastry brush dipped in water to eliminate any sugar crystals that may have formed on the edges of your pan. Once your sugar turns a beautiful dark amber, immediately remove from the heat and add butter and cream. Stir to combine. Add just a touch of vanilla for flavor and of course some salt for that perfect salty sweet combination. Stir one more time to combine.
