Crystalized Ginger Substitutes

In a pinch. Recipe calls for crystallized ginger, but you can't find it in your local grocery store? Not a problem. Substitute one teaspoon of ground ginger for every half cup of crystallized ginger. Another option is to look for dried ginger chunks. Simply slice or dice the dried ginger and then toss it in a bowl of granulated sugar. It replicates crystallized ginger perfectly and it actually is a cheaper alternative. Can you tell the difference?
